PALEO MINT CHOCOLATE CHIP ICE CREAM

I love it when a recipe comes out “No Faileo.” This could be the perfect summer treat. I am not kidding. I made this ice cream at the gym for one of our CrossFit Classes and it went over really well. Despite a malfunction with my ice cream maker (the stupid lid wouldn’t stay down, resulting in me holding it down for 20 minutes while the ice cream froze), this ice cream was AMAZING.

This is another recipe found in Tammy Credicott’s “Paleo Indulgences.” The only change I made was by adding chocolate chips instead of chocolate shavings (I really like chocolate. Really.) If you’re going to attempt a Paleo Ice Cream this summer, try this one.

Mint Chocolate Chip Ice Cream

Ingredients

  • 1 can of coconut milk (full fat, of course)
  • 1 teaspoon pure vanilla extract (no imitation!)
  • 1/2 teaspoon pure peppermint extract
  • 1/2 cup raw spinach (this is what makes the ice cream green….so cool!)
  • 1/3 cup raw honey
  • 1 cup Enjoy Life Chocolate Chips

Directions

  1. Place all ingredients, except the chocolate chips, in a blender and puree until smooth.
  2. Chill in the refrigerator for at least 1 hour (I put the actual blender right in the fridge).
  3. Pour mixture into prepared ice cream make and follow manufacturer’s instructions.
  4. During the last 5 minutes of processing, add the chocolate chips to the mixture.
  5. Enjoy (and try not to eat the entire batch in one sitting)!

    I just stumbled across your recipe when looking for some paleo ice cream ideas, and since I had all the ingredients at home (well, I used 1/3 of the amount of peppermint oil since I didn’t have essence). It’s so tasty! I may cut out 1/3 of a cup of choc chips next time, but then again….maybe not 🙂 Thanks for posting!

    Can you use sweetened almond milk instead of coconut milk. Just curious because i never have tried coconut milk since i can’t stand coconut. Can you taste the coconut in the ice cream.

      I think you need the fat in the coconut milk to get the “ice cream” texture. I don’t taste coconut, just the mint.

    Is this safe for little kids? I didn’t realize peppermint extract was alcohol based.
